Recipe: Aubergine parmigiana

Ingredients:
- 600 g aubergine
- 400 g tomato sauce
- 250 g Parmesan
- 700 g mozzarella
- 70 g basil
Preparation:

1. Slice the aubergines using the CA-2V vegetable preparation machine fitted with the FCS-5 disc.
2. Sear the aubergine slices in a pan until lightly golden and set aside.
3. Slice the mozzarella and grate the Parmesan using the veg prep machine with the SHS-2 disc.
4. Assemble the Parmigiana in an ovenproof tray, alternating layers in the following order: aubergine, tomato sauce, mozzarella, and basil.
5. Repeat the layering process to form 4 to 5 layers.
6. Finish with a generous layer of grated Parmesan.
7. Bake at 180 °C until the top is golden and bubbling.
